Puri is a fried (puffed) Indian bread made with whole wheat flour, salt, and water. It is frequently served with potato curry (aloo sabji) or chickpeas (chole), as well as sweet dishes such as shrikhand or halwa.

Take Whole wheat flour and add salt. Mix Well
Add water little by little and knead after each addition of water

Cover with a damp cloth for 15-20 minutes
Knead again.Divide the dough into 2 Roll into a Roll and divide into small portions

Shape each portion into a ball while applying little oil
Flatten the ball, roll into small disc of medium thickness
Meanwhile, Heat Sufficient Oil to deep fry the puris. It should be medium hot.
Slide in the prepared discs (puris) into hot oil. Press gently so that the Puri puffs up . Turn the puri and keep for some seconds in the oil.

Remove from oil and drain on absorbent paper.
Conclusion
Never use flour once kneaded or while rolling out discs. That will burn and spoil the oil. Stiff dough is important to make puris as they will not absorb much oil while deep frying.
